Ingredients
  1. 3-4 T. cornstarch
  2. 1 pinch salt
  3. 1 pinch pepper
  4. 1 lb. chicken breast, cubed
  5. 1 T. oil
  6. 1/2 c. snow peas
  7. 1/2 c. shredded carrot
  8. 1/2 c. water chestnuts
  9. 3/4 c. orange juice
  10. 1/2 T. orange zest
  11. 2 T. minced ginger
  12. 2 T. honey
  13. 1 T. soy sauce
  14. 1 T. rice wine vinegar
  15. 1/4 c. water
  16. 2 T. cornstarch
Instructions
  1. Toss chicken with cornstarch, salt, and pepper to coat.
  2. Heat oil in skillet and brown chicken. Cook through.
  3. Add vegetables. Cook a few minutes until vegetables are almost tender.
  4. Whisk together remaining ingredients and add to pan.
  5. Simmer a few minutes until sauce thickens.
