Sweet Potato Stuffed Shells

This recipe is based on one I saw in a magazine. At first it seemed like the flavors would be a strange combination, but after making a few tweaks, everything goes really well together. They are even better after sitting in the refrigerator overnight and easy to do gluten-free just by using appropriate pasta.

Ingredients
  1. 12 jumbo shells
  2. 1 1/2 T. olive oil
  3. 1/2 large red onion, chopped
  4. 2-3 cloves garlic, minced
  5. 1/4 t. salt
  6. 3/4 c. chicken broth
  7. 1 1/2 T. apple cider vinegar or red wine vinegar
  8. 1/2 t. italian seasoning
  9. 1/4 t. pepper
  10. 1 large sweet potato, cubed
  11. 3/4 c. feta cheese, crumbled
  12. 1/4 c. parmesan cheese, grated
Instructions
  1. Preheat oven to 375°F.
  2. Cook jumbo shells according to package.
  3. Microwave sweet potato, 5 minutes at a time, until soft.
  4. Meanwhile, cook onion, garlic, and salt in oil until clear.
  5. Add broth, vinegar, seasoning, and pepper. Bring to a boil and cook off most of the liquid.
  6. Mash sweet potato, stir in feta, then stir in onion mixture.
  7. Spoon the sweet potato mixture into the shells and place in a greased baking dish.
  8. Top with parmesan and bake for 15 minutes.
