Ingredients
  1. 2 cups cooked black beans, rinsed and drained well (or 1 can)
  2. 1 egg
  3. 1/4 c. salsa
  4. 1 T. sour cream
  5. 1/4 t. salt
  6. 1 t. cumin
  7. 1 clove garlic, chopped
  8. 2 T. cilantro, chopped
  9. 2 T. cornstarch
  10. 1/2 c. cornmeal
Instructions
  1. Mash black beans with a heavy spoon.
  2. Stir in everything except the cornmeal.
  3. Stir in the cornmeal, using enough to bind the moisture and make them formable, but the mixture will still look and feel fairly wet.
  4. Form into patties and pan-fry until browned.
